The increasing global demand for health-promoting beverages has stimulated interest in developing functional drinks that leverage indigenous fruits rich in bioactive compounds. This study focuses on the development of a fermentation-based functional beverage utilizing locally sourced indigenous fruits, aiming to enhance nutritional value, prolong shelf life, and improve sensory attributes through controlled fermentation processes. The initial phase involved the selection and characterization of indigenous fruits such as tamarind, baobab, and soursop based on their nutritional profiles, phytochemical content, and fermentability. These fruits were subjected to preliminary processing, including cleaning, pulping, and microbial inoculation with selected probiotic strains, primarily Lactobacillus spp., to facilitate fermentation. Fermentation conditions such as temperature, pH, contact time, and sugar supplementation were optimized through a series of experiments to maximize probiotic viability, bioactive compound preservation, and sensory acceptability. Analytical techniques, including spectrophotometry, HPLC, and microbiological assessments, were employed to evaluate the changes in antioxidant capacity, phenolic content, organic acid production, and microbial stability during fermentation. The resulting beverages underwent comprehensive sensory evaluation using trained panels to assess taste, aroma, texture, and overall acceptability, alongside shelf-life studies under various storage conditions. Results indicated that fermentation notably increased the bioavailability of antioxidants and phenolics, contributed to improved sensory profiles, and extended shelf life owing to enhanced microbial stability.
