Project Abstract

The aim of this research project was to investigate and compare the antioxidant activity in different varieties of apples. Antioxidants play a crucial role in protecting cells from damage caused by free radicals, thus potentially reducing the risk of chronic diseases. The study focused on five commonly available apple varieties Red Delicious, Granny Smith, Fuji, Gala, and Honeycrisp. The research methodology involved extracting antioxidants from the apple samples using various extraction techniques, followed by the determination of total phenolic content and antioxidant capacity using spectrophotometric assays. The results were analyzed to assess the differences in antioxidant activity among the different apple varieties. The literature review provided background information on the importance of antioxidants in human health and highlighted previous studies on the antioxidant content of apples.
