Abstract
**
This project aims to address the dietary needs of individuals with celiac disease by developing gluten-free baking recipes. Celiac disease is an autoimmune disorder triggered by the ingestion of gluten, a protein found in wheat, barley, and rye. Consumption of gluten-containing foods can lead to damage to the small intestine in individuals with celiac disease, resulting in various gastrointestinal symptoms and nutritional deficiencies. Gluten-free diets are currently the only treatment for celiac disease, but finding palatable gluten-free baked goods remains a challenge for many individuals. This project will focus on creating gluten-free baking recipes that are not only safe for individuals with celiac disease but also delicious and nutritious.
