Abstract
**
This study aims to investigate the nutritional benefits of ancient grains, which have gained popularity in recent years due to their perceived health benefits and unique nutritional profiles. Ancient grains, such as quinoa, amaranth, spelt, and farro, have been consumed for centuries and are known for their high protein, fiber, and micronutrient content. However, comprehensive nutritional analyses comparing ancient grains with modern grains are limited. Therefore, this research will analyze the nutritional composition of various ancient grains and compare them with commonly consumed modern grains. The findings will contribute to a better understanding of the potential health advantages of incorporating ancient grains into the diet.
