**Abstract
**
This research project aims to investigate the nutritional benefits of ancient grains, focusing on their potential as valuable sources of essential nutrients and bioactive compounds. Ancient grains, including varieties such as quinoa, amaranth, millet, and teff, have gained increasing attention in recent years due to their perceived health benefits and unique nutritional profiles. Despite their long history of cultivation and consumption in various regions of the world, comprehensive studies on the nutritional composition and health-promoting properties of ancient grains are still relatively limited. This study will involve a thorough analysis of the macronutrient and micronutrient content, antioxidant capacity, and bioactive compounds present in selected ancient grains. Additionally, the project will explore the potential health effects of incorporating ancient grains into the diet, with a focus on their role in managing chronic diseases such as obesity, diabetes, and cardiovascular disorders. The findings of this research will contribute to a better understanding of the nutritional value of ancient grains and their potential implications for promoting human health and well-being.
