This study aims to investigate how different food processing methods, including thermal processing, fermentation, and preservation techniques, influence the gut microbiome composition and functionality. By employing metagenomic and metabolomic analyses, this research aims to elucidate the mechanisms underlying microbiome alterations induced by food processing and assess their implications for human health.
