Abstract
Functional beverages have gained popularity due to their potential health benefits beyond basic nutrition. This project aims to develop novel functional beverages fortified with bioactive compounds sourced from natural ingredients. The research will focus on identifying bioactive compounds with antioxidant, antimicrobial, and other health-promoting properties, and incorporating them into beverage formulations. The project will assess the stability of bioactive compounds during processing and storage, evaluate the sensory attributes of the fortified beverages, and investigate their potential health effects through in vitro and in vivo studies. The findings will contribute to the development of functional beverages that offer both nutritional value and health benefits to consumers.
