Thesis Abstract

<p> Plant pigments are responsible for the vibrant colors observed in fruits, flowers, and leaves, serving essential functions in photosynthesis, pollination, and fruit dispersal. This project aims to study the chemistry of plant pigments, focusing on the major classes of pigments, including chlorophylls, carotenoids, and anthocyanins. Through a combination of spectroscopic analysis, chromatographic separation, and structural elucidation, this study seeks to elucidate the chemical structures, properties, and biological roles of plant pigments, as well as their potential applications in food, health, and industry. <br></p>
