This study aims to investigate the impact of various food processing methods on the formation of heterocyclic amines (HCAs), a group of carcinogenic compounds formed during the cooking of protein-rich foods at high temperatures. The research will assess the formation of HCAs in commonly consumed foods subjected to different cooking techniques, such as grilling, frying, and roasting.
