Thesis Abstract

<p><br>Fruits are an important part of human nutrition and also have commercial value. However, a large portion of fruits produced in India are lost post-harvest due to lack of adequate processing and value addition. This leads to economic losses for farmers as well as unavailability of nutritious fruit products for consumers. The proposed project aims to design low-cost equipment for processing of commonly grown fruits like mango, banana and citrus into value-added products. The equipment will help in utilizing the glut production and reducing post-harvest losses at farm level. It will also aid in diversifying farm income through production of fruit bars, jam, juice, squash, etc. which have growing domestic and export markets. <br><br><br></p>
